Michelin-starred Whitegrass Restaurant To Close On 22 December 2018


After three successful years, one Michelin-starred Whitegrass Restaurant spearheaded by Chef-Owner Sam Aisbett announces its impending closure, slated to take place on 22 December 2018.   

The 70-seater restaurant opened its doors at CHIJMES in Singapore in January 2016, and became one of the first to take modern Australian fine dining to Michelin-starred stature in Asia. The restaurant earned its coveted stars in 2017 and 2018. Also in 2018, Whitegrass was voted by industry peers as one of Asia’s 50 Best Restaurants.  


After three years at CHIJMES, Aisbett and Whitegrass’ investing partners have decided not to renew the lease, though the restaurant is performing at its peak.  


“It was a really difficult decision, because the restaurant is doing very well and we have assembled such a strong team,” shares Aisbett, “Whitegrass has fulfilled my dream of elevating the status of modern Australian cuisine, with its Michelin and 50 Best wins. Now we are eager to push the boundaries further, and in order to do that, we need a space that allows the team to be more experimental and focused,” he adds.  

Fans of Whitegrass can expect a new opening from Aisbett in the first half of 2019. The new restaurant will continue to showcase Aisbett’s elevated style of modern Australian cuisine, in an intimate capacity.

There is only one way for rentals to stabilize at sustainable levels; restaurateurs and retailers must pack up en masse and stop pandering to the whims of these blood sucking landlords. But shortsighted fools will continue to prop up the overpriced market in SG.......until they get burnt badly and have to call it quits altogether.
